Doug's Homemade Grilled Pizza


1 cup warm water

1 package dry yeast

2½ tablespoons olive oil

2½ cups all-purpose flour, plus extra for kneading

1½ teaspoons kosher salt

Pinch of black pepper


Make the pizza dough

1. Place yeast in a mixing bowl; add the yeast and let stand for 10 minutes until foaming.

2. Add all ingredients into a food processor and pulse them until mixed.

3. Dust countertop lightly with flour. Turn out dough onto the counter and knead for 5 minutes until smooth. Cover with plastic wrap and place in refrigerator overnight or for up to three days.

Grilling the pizzas

1. Preheat the grill to low and prepare the pizza toppings for quick access.

2. Divide the dough into 2 pieces and form into balls.

3. Press out the pizza dough on a cookie sheet using a few tablespoons of olive oil. The olive oil makes the dough more pliable and helps keep the dough from sticking to your hands.

4. Once the dough is pressed and stretched to the desired thickness (about ¼-inch), place the dough on the grill grates and close the lid.

5. After 1 minute, open the lid and rotate the pizza one half turn to cook it evenly, but do not flip it. Close the lid for 1 more minute.

6. Open the lid of the grill, flip the pizza over, and top with your favorite toppings.

7. Close the lid as soon as the pizza is topped and wait 1–3 minutes until the toppings are hot and melting.

A favorite combination is to spread ginger jam onto the crust, sprinkle it with goat cheese, and finish with toasted almonds. For another family favorite, spread a ¼ inch layer of mashed potatoes on the pizza, then brush with 2 tablespoons of pesto, and top with a sprinkling of freshly grated Parmesan cheese. 

Makes 2, 10-12 inch pizzas
